Change model to codex-mini-latest

To work

This is horrible. How is anyone to use codex cli? Constant errors and simply does not work well. Works for a few minutes and then starts this garbage:

     unknown, Type: invalid_request_error, Message: 400 An assistant message with 'tool_calls' must be followed by tool
    messages responding to each 'tool_call_id'. The following tool_call_ids did not have response messages:
    call_eqZBbIysKRlk0B5JzFXUdO6b. Please verify your settings and try again.

I begged our school district to keep openai but now thinking I made a HUGE mistake.
