Switch email for name in the UI

Proposal

Remove the email from the Codex Desktop App interface on Windows, or switch it to the user's name instead. It could also be offered as an option in the interface settings.

Motivation

It is not only Theo who hates having their personal email address exposed unintentionally.

Benefits

• Reduces accidental disclosure of personal information.
• Makes screenshots and recordings safer to share.
• Keeps the UI focused while preserving account context where needed.
